A few weeks ago on a Thursday evening, as part of Cocoa Beach Uncorked’s VIP media event, I had the opportunity to attend a cooking demo at the Publix Aprons Cooking School over in Doctor Philips. I was immediately interested when I saw who the special guest of the night was, Shaun O’Neale, winner of Master Chef season 7. My fiance and I have been watching Master Chef for several seasons and it’s one of our mid-week guilty pleasures. Such a good show!
After introductions of some of the Cocoa Beach Uncorked Sponsors, it was time to watch Shaun in action as he prepared some dishes for us. While he was cooking, he gave us tips on how to prepare the dishes and told us more about his life as a DJ and home cook turned Master Chef winner. Did you know his favorite comfort food is steak and foie gras?
With the help of some of the Publix Aprons Cooking School chefs, Shaun made three dishes for us, an appetizer, main and dessert. Though each dish was small, they packed a lot of flavor.
The first course was a gorgeously colorful salmon crudo. The salmon had the flavors of tangerines, honey and sriracha. It was topped with celery, thin slices of radish, micro greens and finished with a dash of black salt. My fiance does not eat salmon and even he loved this dish! For our second course, we enjoyed a lobster ravioli with a lemon cream sauce. Each ravioli was stuffed with chunks of lobster and was quite filling. The cream sauce was to die for! Dessert was an elegant white chocolate panna cotta with a fresh raspberry coulis. I’m a dessert person and I can’t wait to re-create this dish at home for friends and family.
After the cooking demonstration, it was Q & A time with Shaun as well as photos with him. Each attendee was sent home with a copy of his brand new cookbook, My Modern American Table and some other goodies. I can’t wait to flip through this cookbook and make some of his favorite meals!
It was my first time checking out Publix Aprons Cooking School and I have plans to go back in August for another class.
